Description

The cake tins are made ​​of stoneware clay with a potter's wheel by hand. They are fired in a gas furnace at 1260 ° Celsius, which gives them their hearty character. The glazes are food-safe and provide an everlasting shine. The high quality of all the pieces ensure that they are dishwasher safe and oven safe.

Carinthian Reindling - the recipe

  • 1 kg flour 
  • 150g butter
  • 2 eggs and one yolk
  • 3 tablespoons sugar
  • ½ l milk
  • 50 g yeast
  • a hefty pinch of salt
  • grated lemon peel
  • butter
  • cinnamon
  • sugar
  • raisins
  1. Mix the ingredients and knead until a soft yeast dough forms. Cover and let rise in a warm place until the dough has reached double its size. Then knead quickly again, and roll the dough out flat until it is about a finger thick. Drizzle the dough with butter and sprinkle with cinnamon sugar and a lot of raisins. 
  2. Roll the dough from one end to the other, as you would cinnamon rolls. Once you have rolled the entire dough into a large sausage shape, place it into your prepared Reindling tin. The tin should be buttered to prevent sticking. 
  3. Cover and allow the dough to continue to rise, until it is once again double its size. Then, bake at a good heat (170-180 ° C) for about an hour. Make sure your oven is preheated. 
  4. Once the Reindling is fully baked, immediately loosen the edges and tip the cake out of the mold. The ceramic mold stores the heat for a long time, which means the dough may cook even after you have taken out of the oven. Now let the mold cool slowly. If it cools too quickly, it could crack. 

A Reindling baked in the ceramic tin forms a crispy crust that is very popular. A proper Carinthian Reindling may have a hole in the middle. This matches the Carinthian Hochzeitsreindling or a standard bundt cake shape. The filling in the Reindling should be slightly gritty- part of the joy is having something to really bite into! Bon appetit!
